Ingredients
23-ounce Ground turkey
21-ounce (about 4 1/2 cup) wild rice, cooked
1 cup diced onion
8 Tbs low sodium taco seasoning
7 minced garlic cloves
3/4 cup salsa
6.6-ounce shredded reduced fat, Mexican style cheese (between 1 to 1 1/4 cups)
Shredded lettuce, optional
Diced tomatoes, optional
Cilantro, optional
Lime, optional
Guacamole, optional
Preparation
In a large skillet, brown the ground turkey on medium heat. (About 10 minutes.)
Add the garlic and onion to the pan and stir.
Continue cooking for 2-3 minutes until the onion is soft.
Turn the heat to low and add the taco seasoning, cooked rice, salsa, and one half of the cheese.
Combine well and cook for 3-4 minutes.
Top with remaining cheese and cover until cheese is melted. (About 1-2 minutes.)
Spoon onto 5 plates/bowls and serve with your favorite toppings (shredded lettuce, diced tomatoes, cilantro, lime, guacamole, etc.)
