Ingredients

  • 23-ounce Ground turkey

  • 21-ounce (about 4 1/2 cup) wild rice, cooked

  • 1 cup diced onion

  • 8 Tbs low sodium taco seasoning

  • 7 minced garlic cloves

  • 3/4 cup salsa

  • 6.6-ounce shredded reduced fat, Mexican style cheese (between 1 to 1 1/4 cups)

  • Shredded lettuce, optional

  • Diced tomatoes, optional

  • Cilantro, optional

  • Lime, optional

  • Guacamole, optional


Preparation

  1. In a large skillet, brown the ground turkey on medium heat. (About 10 minutes.)

  2. Add the garlic and onion to the pan and stir.

  3. Continue cooking for 2-3 minutes until the onion is soft.

  4. Turn the heat to low and add the taco seasoning, cooked rice, salsa, and one half of the cheese.

  5. Combine well and cook for 3-4 minutes.

  6. Top with remaining cheese and cover until cheese is melted. (About 1-2 minutes.)

  7. Spoon onto 5 plates/bowls and serve with your favorite toppings (shredded lettuce, diced tomatoes, cilantro, lime, guacamole, etc.)
