Ingredients

  • 1qty large, sweet potato

  • Desired toppings (see suggestions below)

    • Peanut butter, sliced banana, and cinnamon

    • Mashed avocado, sliced cherry tomatoes, and everything bagel seasoning

    • Black beans, avocado slices, and salsa

    • Almod butter, raspberries, and shredded coconut

    • Hummus, cucumber slices, red onion, and feta cheese

    • Pesto, Mozzarella cheese, ad sliced tomato


Preparation

  1. Preheat oven to 375°F, and line a baking sheet with parchment paper.

  2. Slice the sweet potato into even slices, about 1/4" to 1/2" thick, and place on a baking sheet.

  3. Bake until tender for about 15-20 minutes but not completely cooked through.

  4. Remove from the oven and heat in a toaster or toaster oven for 1 full cycle or until completed cooked.

  5. Top toasted sweet potato with desired toppings.
