Ingredients
1qty large, sweet potato
Desired toppings (see suggestions below)
Peanut butter, sliced banana, and cinnamon
Mashed avocado, sliced cherry tomatoes, and everything bagel seasoning
Black beans, avocado slices, and salsa
Almod butter, raspberries, and shredded coconut
Hummus, cucumber slices, red onion, and feta cheese
Pesto, Mozzarella cheese, ad sliced tomato
Preparation
Preheat oven to 375°F, and line a baking sheet with parchment paper.
Slice the sweet potato into even slices, about 1/4" to 1/2" thick, and place on a baking sheet.
Bake until tender for about 15-20 minutes but not completely cooked through.
Remove from the oven and heat in a toaster or toaster oven for 1 full cycle or until completed cooked.
Top toasted sweet potato with desired toppings.
